Suya

First off, our suya mix;

Yaji 1 + 1/2 cup

Paprika 1/4 cup

Ginger 1/4 cup

Garlic 1/4 cup

Onion powder 1/4 cup

White pepper 1/4 cup

Cameron Pepper 1 Tbs (optional)

Maggi 1 Tbs

Vegetable/Canola Oil 2 cups

Beef cut (Sirloin/Flank Steak)

I buy my meat from Burlington Beef down in South Jersey, New Jersey. When I go, I ask them to give me sirloin cut (frozen) and have them slice it into thin strips, but would flank steak can also be a good sub.

Thaw; Once I am ready to use my meat, I try my best to thaw it down completely because this would come in handy.

You can go ahead to further slice them into linear strips

You want to have your suya blend mixed with some oil, consistency should be almost runny.

Pour a generous portion of your mix unto the meat and hand mix, making sure it touches all part of the meat.

If you would be using skewers, make sure to have them soaked in water for about 15–30 minutes (this prevents burning of the sticks)

Run your skewers through the linear meat strips one by one and place on your grill (or in air fryer).

Typically, I use a coal grill, love that “smokey” flavor 😜

Air fryer temp can be around 300F-350F; regardless of whatever medium you’d be using, ALWAYS stay with your meat biko, it’s like dodo, once you take your eyes off them, they burn, so stay and turn at intervals.

If you meat is turniing a bit dry, baste them with the remaining mix and keep turning until done.

Once done, serve with sliced onions, some ordinary yaji, sliced tomatoes and cucumbers; these last two help with reducing the heat.
